BY DON LONGO Anatomy of a Fix-It Mid America Market looks to outside expert to turn around struggling single store "B ar Rescue" is a reality television series on Spike TV featuring Jon Taffer, a long-time food and beverage industry consultant specializing in nightclubs and pubs. Taffer offers his professional expertise to desperately failing bars in order to save them from closing. Taffer's team surveils the struggling establishment, both with undercover personnel and hidden cameras, to determine its operational and service weaknesses. Then, Taffer — in his brusque, no-nonsense way — con- fronts the owner with a litany of the bar's problems and offers his prescription of what to do to fix those problems. There is no "Convenience Store Rescue" program on television, but there are plenty of convenience store consultants who can offer their expertise to store owners. The best ones have extensive experience from operating their own stores. Services like these are especially useful for those entrepreneurs who don't have a background in retailing. I believe a large percentage of the 90,000-plus single stores in the convenience store industry are operated by people whose main occupation is something other than retailing. Some are banks. Many operate hotels, restaurant franchises, and other businesses. Most could benefit from professional retail management. Michael Zielinski, one of the founders of Royal Buying Group, has nearly 40 years of experience owning and operating multiple retail locations from gas sta- tions and convenience stores to car washes and auto repair shops. This issue of Convenience Store News for the Single Store Owner takes you behind the scenes as Zielinski and his company, MEZ Enterprises, perform a rescue of Mid America Market, a Marathon-branded c-store in Illinois (see story on page 20). Our cover story details the store's problems and many of the solutions and im- provements recommended by Zielinski and implemented by owner Satesha Patel. From the forecourt to the back room, Zielinski and his team revamped the store's operation and have already seen financial results without a major remodel. On "Bar Rescue," Taffer and his crew return to the establishment later to assess the impact of the changes they've made. In a similar vein, Single Store Owner will return to Mahomet, Ill., with Zielinski in a couple of months for a progress report on Mid America Market.
